Surrounded by limestone-rich geology,
the land around Ochi Brewery naturally shapes our water.
Rain and snow are filtered slowly through mineral-rich limestone layers,
dissolving minerals along the way.
The result is hard water filled with minerals—
water we call “Mineraly.”
This cave is famous as the oldest limestone cave in Japan mentioned in written records.
It appears in the Sandai Jitsuroku, an official historical chronicle from the Heian period.
Of its total length of about 800 meters,
around 300 meters are currently open to visitors,
where the limestone landscape can be clearly seen.
The purity of the water supports life.
From late June to early July,
delicate fireflies fill the night with their gentle light,
creating a truly magical scene.
About 80% of sake is water.
That is why we believe water plays a major role in determining the flavor of sake.
Our brewing water is naturally filtered over millions of years through limestone formations,
much like those found in caves.
As it slowly passes through these layers, the water absorbs an abundance of minerals.
By using this mineral-rich hard water,
we are able to create a deep, rich, full-bodied flavor in our sake.
